Welcome to the first edition of The Nutritional Supplement 2024!

We have lots of news of what went on at CNELM in 2023, as well as what is still to come and also an interview with CNELM graduate Lucy Swain, who had spent most of her career working as a Speech & Language Therapist in the NHS. 

There are also some fascinating articles and research to dive into.

CNELM Has Gone Virtual!

As of the 19th December CNELM became a Virtual Business. We have been operating as a Virtual Business for the last year and most staff have worked off-site since the outset of the pandemic in 2020. Degree programmes are validated for Distance Learning only. Clinical programmes adapted to fully online from March 2020 and continue to be offered via Distance Learning and online supervision. Results of a comprehensive student survey indicated that the overriding benefits of online learning outweighed the opportunity to attend some clinical blocks live. 

Should we host a live event in the future then we would hire a suitable premises.

SSM Role


I would like to take the opportunity to introduce myself for those new students who may not be familiar with me and my role. As Student Support Manager (SSM), I offer both formal and ad hoc sessions to all students at various points throughout the year.  

Formal bi-annual sessions offer students a formal opportunity to provide feedback on your experience of the course, which is then anonymously analysed and reported back to CNELM in order to enhance services to students.

Aspects of your studies covered in formal sessions include: -

  • Gauging whether you are on track with your study programme
  • If you generally are happy with the level of feedback received for assessments
  • If teaching and administrative staff are accessible and supportive
  • If the learning resources are accessible and suitable to your needs
The focus of the formal sessions is therefore mainly academic.

Ad hoc sessions run monthly throughout the year and provide confidential pastoral support. They serve to offer students additional pastoral support for those of you experiencing extenuating issues which are impacting on your studies in some way - this might be personal/family reasons, health issues, financial worries or anything else which you need emotional support with.

Some comments from students who have used the ad hoc service recently and found it helpful are: - 

“I was having some personal issues which were affecting my studies, and the practical suggestions I received helped to reduce my stress levels.”

“I did find it helpful as Coriander gave me various options to consider going forward with the course following life circumstances impacting my studies, and she put me in touch with the right people.”

“I found the service supportive and responsive.”

“I had personal struggles which made my studying experience hard. When speaking with Coriander, she listened to my issues very well, demonstrated understanding, supported me with good advice and even offered her personal experience for dealing with the issues I had. Overall, very positive experience with a SSM who is easy to talk to.”

Both formal and ad hoc sessions also cover guidance for students with known or self-suspected Learning Needs or other disabilities.

Ad hoc sessions will take place on the following dates for 2024 and can be arranged by emailing me directly: -

Formal sessions give you the students an opportunity to feedback on your experience of being a student at CNELM. The formal sessions dates for 2024 will be held from 17th – 21st June and from 2nd – 6th December and a Straw poll will be made available nearer the dates. A Zoom meeting will be set up for the session, which lasts for 15-30 minutes. If further time is required then this can be arranged via a separate, ad hoc session. 

You are of course always welcome to email me directly with any queries, for example if you need to speak to me on any different date or need pastoral support outside of the ad hoc dates.

Online Breathing Sessions

Nicola Pearson holds online relaxation breathing sessions via Zoom every Monday 10.00-10.15am GMT and Wednesday 10.00 – 10.15am GMT. These sessions differ each week and blend gentle breathing techniques, calming guided relaxations and/or sleep yoga.

Feel free to wrap yourself up in blankets (if cool) and/or snuggle into cushions whilst lying down. Or be seated, standing, moving or in stillness. Eyes may be open or closed. Nic always encourages listening to your own body.

Sessions start again after the festive break on Monday 8th January.

Student Research


CNELM had four students present at the Student Research Professional Enhancement Day in October:

  • Zoubida Mekouar - Glutamine supplementation & the prevention of chemotherapy induced intestinal mucositis
  • Vicky Walsaw - a mechanistic exploration of vitamin D on antimicrobial peptide activity and IBD disease activity
  • Niamh Hanlon - Investigation of the role of the aryl hydrocarbon receptor (AhR) in modulating intestinal ILC3s for optimisation of gut pathogen resistance in systemic lupus erythematosus and the potential benefit of nutritional AhR ligand interventions
  • Natalie Molchanova - Oxidative stress, mitochondrial dysfunction and Alzheimer’s Disease: targeting SIRT1 regulation to prevent neurodegeneration with resveratrol as a potential intervention.

Behaviour Change in Clinic

This article from Clinical Education looks at the challenges that come with eliciting behaviour change in individuals. The article explores the difficulties of behaviour change and highlights the benefits of the “meaning response” as a valuable tool in facilitating change. It also offers key tips for healthcare professionals to effectively apply the meaning response to enhance behaviour change outcomes. 
Staying Focused

In a world where our attention is being pulled in every direction, it can be exceedingly difficult to keep focused.

This episode of The New Way We Work breaks down what’s really behind our inability to focus, how to deal with distractions and train our brains to concentrate, and how to find motivation as the landscape of working and work-life balance continues to change. 

Personalised Healthcare & Dementia: 
A new study suggests that personalised health and lifestyle changes may be able to delay or even prevent memory loss in people at high risk for Alzheimer’s disease. Researchers found that participants who received personalised coaching experienced a 74% improvement in cognitive testing over the non-personalised group. The personalised coaching group also had a 145% improvement in risk factors and an 8% improvement in quality of life compared to the non-personalised group.

Triglycerides & Dementia:

New research suggests that people with higher levels of triglycerides carried a lower risk of dementia and slower cognitive decline if they do develop dementia. The researchers said the final data showed that higher levels of triglycerides were associated with a slower cognitive decline in participants who developed dementia. They added that higher triglyceride levels may also be associated with a lower risk of developing dementia in the first place, although there is no causal link between these higher levels prevent dementia.

Fructose & Obesity: 
Recent research suggests that fructose from added sources, such as high fructose corn syrup, may be the driver of obesity. The study suggests that high levels of ingested fructose suppresses the activity of mitochondria, triggering an alarm signal which stimulates hunger, thirst, increased energy intake, insulin resistance, increased food absorption and reduced resting metabolism.

Avocados & Glycaemic Control:
There is new evidence to suggest that avocados may significantly improve blood sugar control in some people. The authors identified the presence of an “avocado intake biomarker” in some people that was significantly associated with lower fasting glucose and lower fasting insulin, as well as a reduced risk of developing type 2 diabetes, suggesting that individualised metabolic profiling may be key to identifying foods to reliably aid a person’s health.
Beef Noodle Soup

Serves 6

Ingredients: 

8 star anise
5g dried liquorice sticks (if you can’t get hold of any, up the star anise to 12)
2 tsp Szechuan peppercorns
½ tsp fennel seeds
50ml sunflower oil
1.2kg beef shin, boned, cut into 5cm chunks and patted dry
6cm piece fresh ginger, peeled and cut into 2mm slices
10 large garlic cloves, peeled and roughly crushed with the flat of a knife
2 red chillies, cut in half lengthways and deseeded
200ml Chinese rice wine
60ml premium dark soy sauce
150ml light soy sauce (again, Kikkoman for preference)
3 tbsp demerara sugar
2.8 litres boiling water 
6 spring onions, trimmed and cut in half widthways
250g dry udon noodles


Put the first four ingredients in muslin and tie into a bundle.

In a 30cm-wide and very deep pot for which you have a lid, heat the oil on a high flame. Once it’s very hot, add the beef (take care, because the oil will spit) and saute for about three minutes, stirring frequently, until the meat is browned (depending on the size of your pan, it may be better to do this in two batches). Add the ginger and stir-fry for three minutes, then add the garlic, chilli and muslin bundle, and stir-fry for six minutes more. Don’t worry if things start sticking to the base of the pan, because it will be deglazed later by the liquids.

Add the rice wine, both soy sauces, the sugar and boiling water, and stir to combine. (If your pan struggles to accommodate all that in one go, hold back some of the water and add it later, once some of the liquid in the pan has evaporated.) Bring to a boil, cover, turn the heat to medium and leave to cook for 90 minutes. After this time, add the spring onions, cover and cook for another hour.

When the soup is nearly ready, cook the noodles as per the packet instructions, then divide between six bowls, top with the soup (discard the muslin bundle) and serve.

Senior Nutrition Scientist:

Description:

You are part of a project team that conducts long-term research projects that will help us deliver our strategy. You plan and execute projects and/or work tracks from hypothesis to experiments and through to results interpretation, write up, recommendations and dissemination. In this role, you establish internal and external technical networks and interact independently with senior managers and stakeholders.

How you will contribute:
You will plan, lead and coordinate projects and/or work tracks, collaborating with senior technical colleagues, and supporting and influencing cross-functional, cross-category customers through the delivery of technical programs. You will plan, lead and execute bench-top experimental work plans and trials following good manufacturing practice and HACCP requirements and oversee scale up to pilot and factory scale where appropriate. To succeed in this role, you will develop hypotheses and conceptual models that deliver technical applications and processes that are relevant across multiple snack categories and independently plan, lead and coordinate project-related activities such as literature reviews, IP landscaping, analytical testing needs, consumer science testing, etc., working with subject matter experts (SMEs) to identify best practices. In addition, you will interpret data, findings and results and define subsequent steps while demonstrating sound scientific know-how and capability to link findings to business objectives.

What you will bring:
A desire to drive your future and accelerate your career and the following experience, knowledge and understanding of the science related to the effect of ingredients on health and the launch of human studies with all the administrative parts mandatory to respect Good Clinical Practices

  • Communicating complex technical problems and solutions in a clear and concise manner to technical and non-technical stakeholders, adapting style and content accordingly

You will participate to research programs (including in vitro, and/or animal and/or human trials) to promote specific health interest related to Mondelez strategy. Specifically, you will be strongly involved in food behavior research approach in line with business interest. Additional research topics related to human nutrition can be part of your contribution in line with the strategy evolution.

What extra ingredients you will bring:

  • Education / Certifications:
  • PhD in human physiology OR in nutrition OR in psychology related to human food behaviour AND proven experience in professional experience in applied research,
  • OR master degree in nutrition and extensive professional experience in applied research related to food behaviour.
  • Statistical skills

Location:
This role will be based at our site in Reading (university campus) or Birmingham, however the preferred location is Reading.
