GM Food Laws UK

DEFRA (Department for Environment, Food and Rural Affairs) are currently considering legislation around gene-edited foods, which might not always carry a GM label.

The legislation around the regulation of genetic technologies and labelling is now subject to change in the UK at least since our departure from the EU. If you wish to read up, respond to and share this information, you can do so here.

Some arguments both for and against genetically modified foods can be found here and here and it would be good to gather thoughts from those of you who have views on this or have found any conflicting information in this topic. Please email me at coriander@cnelm.co.uk with thoughts for the next edition.

TED Talk - Controlled Hallucinations

This fascinating TED Talk discusses the idea of controlled hallucinations – that our conscious experiences of the world around us and ourselves within it are kinds of controlled hallucinations that happen because of our living bodies – an interesting idea when the world turns itself upside down!
Student Resources

Invivo Healthcare have a range of articles on the immune system and how to support it via a variety of ways. Immune Resilience: The Keystone Role of the Mucosal Immune System, focuses on mucosal immunity as a whole, with a specific focus on SIgA as a gateway to overall immune health. The other articles can be read here and here.

This piece from the Alliance for Natural Health (ANH) is about the VitaC4Care study, a vitamin C study which is being led by Professor Phyo Myint and and Dr Alan Sneddon alongside some of the top vitamin C researchers in the world. As these researchers are giving their time on the project for nothing, crowdfunding is the only way to complete the study. You donate to this study here

Weight Loss & Food Marketing:

Researchers in Canada and France have found that women with obesity appear to be more vulnerable to food marketing — but that weight loss due to bariatric surgery can free them from the cycle. It remains unclear whether people who lose weight through other means like exercise or dieting, also become less responsive to food marketing and the authors acknowledge that their study had some other limitations.

Food Preservatives & Immunity:

Researchers analysed a total of 63 direct food additives present on more than 10 product labels sold in the U.S. in 2018–2020, as well as nine identified PFAS that migrate from food packaging to food and found that some caused immune functioning changes.

Sugar & Liver Function:

New research provides further evidence of the dangers of consuming sugar, proposing that ingesting even moderate amounts of the substance may lead to a change in a person’s metabolism.
Tamarind Mushroom Noodles

Ingredients (serves 2):
2 x 80g dried noodles
3 tbsp neutral oil, plus extra for tossing
60g shelled cashew nuts
250g shiitake mushrooms, stems removed, flesh sliced
Sea salt
1 tbsp Shaoxing wine, or rice-wine vinegar
3 garlic cloves, peeled and thinly sliced
2 banana shallots (120g), or 4 small shallots, peeled and thinly sliced
2cm ginger (10g), peeled and finely chopped
100g Tenderstem broccoli, cut in half lengthways, then cut into 3cm pieces on the diagonal
2 tbsp light soy sauce
2 tbsp kecap manis, plus extra for serving
3 tsp tamarind paste
2 eggs (optional)

Bring a pan of water to a boil, add the noodles and cook according to the packet instructions (usually two or three minutes). Drain, refresh in cold water, then toss with a splash of oil to prevent the noodles from sticking together and set aside.

Meanwhile, toast the cashews in a dry wok or frying pan on a medium heat until golden, then set aside. Turn up the heat to high, pour a tablespoon of oil into the same pan, then add the mushrooms and a pinch of salt, and stir-fry for four to five minutes, until golden. Add the Shaoxing wine and cook until it evaporates. Turn down the heat to medium, add another tablespoon of oil, then stir-fry the garlic, shallots and ginger for three to four minutes, until softened.

Add the broccoli, stir-fry for a minute more, then add the soy, kecap manis and tamarind, and stir to combine. Finally, add the noodles and cashews, and toss everything together.

Meanwhile, fry the eggs, if using. Put a nonstick frying pan on a high heat, add a tablespoon of oil and, once shimmering, crack in the eggs. Reduce the heat to medium and cook until the whites are done and the edges are browned.
Transfer the noodles to serving plates, top with the fried eggs and a drizzle of kecap manis, and serve immediately.
